Lobster with lemon and basil butter

    • 1 cooked lobster
  • Basil butter
    • 4 tbsp unsalted butter
    • Zest of 1 lemon
    • Juice of half a lemon
    • 10 leaves of fresh basil
    • 0.5 tsp salt
    • 5 turns of a pepper grinder
  • To serve
    • Half a fresh white baguette

Procedure

  1. As the lobster has already been cooked, it should not be reheated. You can serve it as is, together with the basil butter.
  2. Cut the lobster in two lengthwise and remove the material from the head.
  3. Make the butter by putting the grated zest of one lemon and the juice of half a lemon in a pan. Taste and add more juice if you want a sharper lemon flavour.
  4. Add the butter and melt. Add the salt, pepper and basil. Heat.
  5. Place the lobster on a plate with the cut side up and pour the basil butter over. Serve with freshly baked bread.
