Procedure
- As the lobster has already been cooked, it should not be reheated. You can serve it as is, together with the basil butter.
- Cut the lobster in two lengthwise and remove the material from the head.
- Make the butter by putting the grated zest of one lemon and the juice of half a lemon in a pan. Taste and add more juice if you want a sharper lemon flavour.
- Add the butter and melt. Add the salt, pepper and basil. Heat.
- Place the lobster on a plate with the cut side up and pour the basil butter over. Serve with freshly baked bread.
